Pinellas County’s biggest Dunkin’ Donuts franchisee owns nearly two dozen of the pastry-and-java joints, with more on the way. This year Vik Patel diversified, moving into the beer world by opening The Brass Tap in Oldsmar. It’s the first of a 10-store franchise contract with the brand, which was founded in Wesley Chapel in 2008.
Patel is fast-tracking Brass Tap. Two are under construction, with more in the pipeline. This is good news for local craft brewers. Patel is deeply committed to the Bay area’s bubbling beer scene, and has devoted ample tap space to brands like Cigar City, Dunedin Brewery, 7venth Sun, Big Storm and 3 Daughters, with plans to add more.
Patel is a low-on-the-radar restaurant operator who could become an unsung champion of the Bay area brew scene.
